THE KITCHEN

“Despite being relatively restricted to an Atlantic sustenance, Portuguese cuisine has a lot of Mediterranean influences. The influence of Portugal’s former colonial possessions is also notable, especially in the wide variety of spices used. These spices include piri piri (small, fiery chilli peppers) and black pepper, as well as cinnamon, vanilla and saffron. Olive oil is one of the bases of Portuguese cuisine both for cooking and flavouring meals. Garlic is widely used, as are herbs such as coriander and parsley” (From Wikipedia)

I try to focus on traditional home cooking, showing dishes how you would find them in Portuguese homes and common Portuguese restaurants. You won’t find any kind of gourmet recipes here, what I demonstrate are all just straightforward dishes that are easy to do well and will help you develop your own confidence with Portuguese cooking. In line with this ethos all my videos are done at home and I try to use tools and techniques that can be replicated in any Kitchen.

You may find that some of the more complex recipes might have been simplified to make it easier to recreate at home or have in some way been adapted to a foreign audience. These are recipes which are more commonly found in Portuguese restaurants and thus tend to require more effort, or recipes that require a specific type of ingredient which may not be easily acquired outside Portugal. Even so I trust that the quality of the end result won’t disappoint you.

Happy cooking!
